Colorful and tangy chicken salad topped with mandarin oranges and toasted almonds

Ingredients

  • 1 1/4  c
  • Extra Virgin Olive Oil
  • 3/4  c
  • Cider Vinegar
  • 3/4  c
  • Orange Juice
  • 6  tbsp Mrs. Dash Original Blend
  • 3  tbsp
  • Dijon Mustard
  • 3  tbsp
  • Honey
  • 6  lb
  • Cooked, Cubed Chicken
  • 4 1/2  c
  • Celery, Thinly Sliced
  • 3  medium
  • Red Pepper, Sliced
  • 6  c
  • Mandarin Orange Segments, Canned, Drained, Cut in half
  • 1  c
  • Sliced Almonds, Toasted

Preparation

  1. Combine oil, vinegar, orange juice, Mrs. Dash Original Blend, mustard, and honey; blend well.
  2. Combine chicken, celery, and red pepper.
  3. Pour dressing over chicken mixture, toss, and chill for up to 8 hours.
  4. Add orange segments and almonds before serving.
